This material today does not use special distribution in kitchens, probably due to the fact that it does not possess such elegance as the first two. Indeed, terracotta dishes, for the most part, have a fairly simple and even rough appearance. There is nothing surprising - for the five millennia that have passed since that person began to use just such utensils, the production technology and the composition of the feedstock has not changed. Red, terracotta clay after firing acquires a brown tint. One of the distinctive properties of dishes from it is high porosity - moisture absorption of baked clay ranges from eight to ten percent. This indicator determines the specifics of cooking in dishes made from it. Before you load all the necessary ingredients of the future dish into pots or any other dishes, the container itself and its lid must be kept in water for ten minutes. No fats are required in the cooking process, just put the dishes in the oven, light the fire and bake. The moisture that the clay saturate gradually evaporates, and as a result, the food will turn out as if steamed.
